Recipes and info are courtesy of VH1.com!

Renee’s Thanksgiving Turkey

1 (15 pound) whole turkey, neck and giblets removed
2 tablespoons fresh parsley
5-6 fresh rosemary leaves
salt and pepper to taste
3 stalks celery chopped
1 teaspoon of garlic powder
2 teaspoons of onion powder
1 stick of softened salted butter
2 orange, cut into wedges
2 lemons cut into wedges
1 onion, chopped
6 carrot
1 (14.5 ounce) can chicken broth

Preheat an oven to 350 degrees.

Stir together the parsley, rosemary salt pepper, onion and garlic powder and 1Ž2 of the can of chic stock, in a small bowl. Rub the herb mixture into the cavity of the turkey, then stuff with the celery, orange, onion, and lemons. Place the turkey in a roasted pan then pour the rest of chicken broth over the turkey and on top of the turkey smear the butter.

Put aluminum foil over the top of the turkey, and seal. Try to keep the foil from touching the skin of the turkey breast or legs arrange the carrots around the turkey.

Put the turkey in the preheated oven for 2 1/2 to 3 hours until no longer pink at the bone and the juices run clear. Uncover the turkey, and continue baking until the skin turns golden brown, 30 minutes to 1 hour longer. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees

Remove the turkey from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.

1 LB. ground beef chuck
1 LB. ground pork
1 LB. ground veal
5 slices white bread
1 cup whole milk
1/4 cup chopped fresh parsley
1 Tbs. minced fresh garlic
2 tsp salt
1½ tsps. freshly ground black pepper
3 eggs

Cooking Directions:

Combine all of the meat in a large bowl. Soak the bread and milk together in a separate bowl. When the milk is absorbed, add the bread mixture to the meat. Add the remaining ingredients except the olive oil. Mix well.

Roll into balls 1 ½ – 2 inch round. Heat the olive oil in a 10 inch frying pan.

Fry over medium heat about 10- 12 meatballs at a time until nicely browned. Place in the sauce. Repeat as many times as necessary until all of the meatballs are browned.

Simmer uncovered on low heat until meatballs are fully cooked and the sauce mellows, about 1-1/2 hours. Remove the herb sprigs and serve.

This recipe was styled and developed by chef Karen Pickus for Good Morning America.

2 cups chopped onion
2 Tbs. minced fresh garlic

Renee’s Favorite Deep Dish Apple Pie (Recipe courtesy of Eating Well)

“To me, you can’t go wrong with a good old apple pie. I also suggest you use a dollop of vanilla or pumpkin flavored frozen yogurt in place of ice cream on top,” Renee writes about this healthy-ish variation of an apple pie recipe. “And if you still feel guilty, there’s always another glass of wine to help drown your sorrows.”

Crust:
1 1/4 cups whole-wheat pastry flour, (see Ingredient Note)
1 1/4 cups all-purpose flour
2 tablespoons granulated sugar
1/2 teaspoon salt
4 tablespoons cold unsalted butter
1/4 cup reduced-fat sour cream
3 tablespoons canola oil
4 tablespoons ice water

Filling:
6 cups thinly sliced peeled McIntosh apples, (about 2 pounds)
6 cups thinly sliced peeled Granny Smith apples, (about 2 pounds)
2/3 cup packed light brown sugar
1 tablespoon lemon juice
1 1/4 teaspoons ground cinnamon, divided
1/8 teaspoon ground nutmeg
Pinch of ground allspice
Pinch of salt
2 tablespoons all-purpose flour
1 teaspoon granulated sugar
1 large egg white, lightly beaten, for brushing

Preparation:

1. To prepare crust: Whisk whole-wheat flour, 1 1/4 cups all-purpose flour, 2 tablespoons sugar and 1/2 teaspoon salt in a large bowl. Cut butter into small pieces and, with your fingers, quickly rub them into the dry ingredients until the pieces are smaller but still visible. Add sour cream and oil; toss with a fork to combine with the dry ingredients. Sprinkle water over the mixture. Toss with a fork until evenly moist. Knead the dough with your hands in the bowl a few times – the mixture will still be a little crumbly. Turn out onto a clean surface and knead a few more times, until the dough just holds together. Divide the dough in half and shape into 5-inch-wide disks. Wrap the dough in plastic and refrigerate for at least 1 hour.

2. Meanwhile, make filling: Combine apples, brown sugar, lemon juice, 1 teaspoon cinnamon, nutmeg, allspice and pinch of salt in a large bowl. Reserving 4 cups, transfer the rest of the apple mixture to a Dutch oven. Cook over medium heat, stirring, until the apples are tender and beginning to break down, about 10 minutes. Remove from the heat, stir in the reserved apples and 2 tablespoons flour; let cool for about 30 minutes.

3. To assemble & bake pie: Position a rack in lower third of oven; preheat to 425°F.

4. Remove the dough from the refrigerator; let stand for 5 minutes to warm slightly. Roll one portion between sheets of parchment or wax paper into a 13-inch circle. Peel off the top sheet and invert the dough into a 9 1/2-inch deep-dish pie pan. Peel off the remaining paper. Scrape the filling into the crust. Roll the remaining portion of dough between sheets of parchment or wax paper into another 13-inch circle. Peel off the top sheet of paper and invert the dough onto the fruit. Peel off the remaining paper. Trim the crust so it overhangs evenly. Tuck the top crust under the bottom crust, sealing the two together and making a plump edge. Flute the edge with your fingers. Combine 1 teaspoon granulated sugar and the remaining 1/4 teaspoon cinnamon in a small bowl. Brush the crust with egg white and sprinkle with the cinnamon-sugar. Cut 6 steam vents in the top crust.

5. Bake the pie on the bottom rack for 20 minutes. Reduce the oven temperature to 375° and continue baking until the crust is golden brown and the filling is bubbling, 25 to 35 minutes more. Let cool on a wire rack for about 1 1/2 hours before serving.

Recap - Mob Wives: New Blood - Episode 1: Season Premiere

$

0
The season premiere of the fourth season of Mob Wives started with the obvious, cast changes. Since the departure of veteran Mob Wives stars Karen, Carla, Ramona and Season 3 newbie Love, the show came back with a new title which is now called Mob Wives: New Blood. With the return of Drita, Renee and Big Ang, the show title is self explanatory; new blood means new cast members which means new drama. The show welcomes new cast members Alicia and Natalie who are from Philadelphia. With that out of the way, this week on Mob Wives: New Blood we see what Renee, Big Ang, and Drita have been up too since Season 3 and we get introduced to the new blood which are Alicia and Natalie. Read our full recap below!

The episode starts off with Renee Graziano, A.J. is back from Florida since his job felt through, Renee is happy to have to her son back, and if that wasn't enough Renee is happy to announce that her father is coming out from prison very soon. Next Renee calls up Big Ang they talk about an upcoming costume party that Renee’s friend Alicia is throwing in Philadelphia. Big Ang is relieved and glad to be back in Staten Island since her Miami trip was stressful for her dealing with the opening and the drama that went down in Miami Monkey. Drita is happy to announce that Lee is still in her life and they are all happily in love celebrating and enjoying being a family.

Big Ang, Renee and Drita head over to Philly for Alicia’s Gatsby themed costume party. Now we’re introduced to Alicia DiMichael, one of the new cast members’ aka new blood. Renee and Big Ang know Alicia due to her husband, they all grew up with her husband. Alicia’s husband is currently serving time for some charges that I really don’t want to get into but the crazy part is that she might also be charged, and she may have to serve time if she is proven guilty (correct me if I’m wrong, but I was more distracted with her fierce costume). I must say Alicia is stunning and I love her exotic look, did I mentioned that I love her costume look?

Drita finally meets Alicia and they seem to hit it off. The next day Renee, Drita and Big Ang sit around and catch up when Big Ang announces that her husband Neal wants to have a baby boy, so basically Big Ang wants to have a baby. Drita and Renee are beyond shocked. Due to Big Ang age, she is planning having the baby via surrogate.

Renee is getting ready for the launch of her clothing and shoe line called Mob Candy and since the launch party is in only a few days away she needs to find the model who will be the face of the brand. Renee invites Alicia over to help her find the perfect model, the casting ends in a disaster since Renee can’t find the right person when Alicia recommends her friend Natalie.

Drita calls Lee and lets him know that on of their daughters is being bullied at school by a group of girls. Lee flips out and says that their daughter needs to physically attack this bully. While I don’t condone violence I can understand the anger by Lee, he loves his daughter and when someone messes with your loved ones it’s on. Drita tells Lee that the school systems has changed a lot since their days in school and attacking your bully is not the answer, seems like anger management did helped Drita (sarcasm, all in good fun).

Alicia is in NYC since she went to visit her husband in prison. Alicia meets up with Drita and Big Ang, Alicia tells the girls the history of her and her husband to the girls when the subject of her father in law’s death is brought up. Alicia reveals that the person who murdered her father in law was none other than Sammy “The Bulldog” who is Karen’s father. Drita is beyond god smacked shocked while Big Ang looks like she was familiar with this. Alicia doesn't agree with Karen being proud of her father since in her words he was a murderer, she doesn't approve of it and Drita and Big Ang are just glad that Karen is in Arizonabecause they know that there will be war. Alicia makes it clear that she does not wish to be around or near Karen.

It’s America’s Next Top Model or is it America’s Next Mob Model? Whatever you want to call it, Natalie is all dressed up and looking fierce doing a photo shoot for Renee’s Mob Candy fashion line and Renee is happy with the results. Alicia calls Natalie and mini Renee, and by the looks of it I can see why, she is not afraid to speak her mind, she’s straight forward and she’s fun (so far so good).

Alicia then visits Renee and talks to her about the connection she has with Karen and Renee let’s Alicia know very quick that that’s an issue between Alicia and Karen’s family, not hers therefore she will keep her friendship with Karen and Alicia has to deal with it pretty much, which is fair and I agree with Renee.

Renee organized a luncheon with Big Ang and Drita to meet the face of her fashion line which is Natalie but for some reason Renee is unable to attend. Big Ang and Drita arrive and first impressions are everything, but Natalie seems not worried and has no problem being herself. Drita thinks Natalie is hot, Natalie starts up the luncheon with two lemon drops and a cranberry and vodka, that alone I know I’m going to love her, cocktails, cursing and a good time? Count me in please! By the looks of it Natalie seems to be talking gibberish or she’s too buzzed or it's editing? I dunno! Natalie reaches over Big Ang’s plate and eats a meatball which turns off Drita and Ang. After Natalie goes to the restroom, Drita and Ang decide its check out time.

It’s time for the Mob Candy launch party and everything seems to go well, Natalie is introduced to the runway and she works it when she’s about to walk off, she trips but manages to recovery quickly. Dirta and Ang talk with Alicia regarding their first impression of Natalie and her “behavior” but they don’t notice that Natalie is behind them listening to them which upsets her. Overall Renee’s Mob Candy is a candylicious success and the episode ends there.

What were your thoughts on the premiere episode? Did you miss Carla, Karen, Ramona and Love? What are your thoughts on Alicia and Natalie? Tell us your thoughts below!

Recap: RHOA Season 6 - Episode 6: The Old Lady And The Shoe

$
0
0
Tension continues between Phaedra and Apollo, Porsha ends up in the hospital, Kandi is caught between her friend Carmon and her mother as a fight occurs during her wedding dress fitting and NeNe plans an all girls trip. Read our recap below!

The episode starts Todd and Carmon telling Kandi that she needs to put a stop to her mother for spreading negative rumors about them. Meanwhile NeNe and Greg visits her high school friend and they talk about Phaedra. NeNe claims that there was rumors in high school that Phaedra was known as the “head doctor” if you know what I mean. But if I recall correctly during the Season 3 reunion of RHOA, when Phaedra said she knew of NeNe back during their high school days in Athens, NeNe quickly denied knowing, heard of or ever talking to Phaedra. Hmmm something is not adding up here. So which one is it NeNe, did you know Phaedra back in the day or you didn't?

Phaedra and Apollo talk about the whole Kenya text-gate situation. I mean do we still have to deal with this? Apollo sort of apologizes but then he doesn’t, the problem with Apollo is that he still doesn’t think what he did was wrong which pisses Phaedra off and me too. He clearly didn’t follow Peter’s advice. Apollo feels like Phaedra doesn’t have any time for him and finds her more distant. Phaedra agrees with him but she promises as soon as school is over they are gonna be back to normal. We'll see how that turns out.

Kandi invites the girls over for some cardio and I must say Kenya and Cynthia are looking beyond fierce. NeNe takes this opportunity to tell the girls that she wants all of them to go on a all girls trip to Savannah, then NeNe let’s them know that Porsha was in the hospital since she fainted and fell. They call Porsha to check on her.

Next Noelle spends quality time with her dad and she tells him about her boyfriend, I swear Leon is a great man, he is what every women would love to be with. Cynthia then sites down with her ex, Leon to discuss about their daughter Noelle having a boyfriend. Leon tells Cynthia that he is ok with it and he would like for Noelle to confide on him about anything, including sex. Cynthia agrees to a certain extend and says she also hopes for Noelle to talk to her about it as well. I have to say I love the dynamic between these two, they are a perfect example on how to great is to co-parent, Mazel to them!

Next we see Porsha at the drug store with her sister. Porsha reveals that while walking off the plane she fainted and fell during the last two steps of the stairs. Luckily nothing major happened to her. Apparently she has a condition where the brain needs more oxygen, apparently this happens when you stress a lot, hope that doesn't happen to me. Moving on, Porsha gets a call from NeNe and invites her for the all girls trip in Savannah, Porsha says yes. Porsha and Kenya trapped in vacation? Now this should be good!

Next Kenyameets her aunt for lunch and they start talking about Kenya’s boyfriend. Kenya’s aunt thinks it’s time for her to think about having children. Kenyareveals she always wanted to get married first but she definitely wants children no matter what, when the subject of her mother comes up. Kenya realizes that she is still has issues of the abandonment from her mother, I must say it's nice to see a vulnerable side to Kenya.

Kandi and her friend Carmon go to try on wedding dresses. Carmon waits for Kandi as she is trying on her first weeding dress when Mama Joyce and Kandi’s aunts arrive. You can feel the tension between Mama Joyce and Carmon, then Mama Joyce  makes a remark saying she hopes Kandi never wears the dress when Carmon questions her and tells her why did she show up if she’s going to be so negative when Mama Joyce gets up and tells her because she’s family and questions why Carmon is there. Things get heated when Mama Joyce makes more accusations about Carmon sleeping with Todd when Carmon tells her there’s no rumors, that is Joyce, she's the one starting all the rumors when Mama Joyces tries to physically attack Carmon. At one point Mama Joyce removes her shoes and wants to throw it at Carmon when Kandi walks out and tries to put a stop to it.

Carmon leaves and waits for Kandi in another waiting area but the shocking part is that the aunts cover for Mama Joyce and try and lie and say that Carmon was the one wanting to attack Joyce when it’s a complete lie. Next Kandi and Carmon sit down and talk and Kandi believes her and knows how her mom is. I understand that Kandi respects her mom as everyone should but Mama Joyce behavior is out of time and ridiculous, but at the same time I commend her for bringing on the drama because lately the RHOA episodes have been quite boring lately, until next time.
